Almost.


After 65 days...only 15 more to go.

I rarely post about the details of my not-so-intricate life. I'd like to think I'm fairly private about certain things.

But I cannot wait to see my boy.

Just the idea of trivial outings such as grabbing coffee or going to dinner is like a dream to me. Something as small as whispering "I love you" or cuddling is something I never take for granted when the opportunity arises. These are little things that I hope you happy couples never take for granted because I know at one time in my life I did.
Long distance isn't something I chose and I don't know that I would want that for my friends but this challenge has made me come to appreciate all that this love has given me. For the moments that we have together, the 500 miles are minor detail.

Food Journal #13

Breakfast: Peach, banana, and blueberry smoothie. Coffee with Splenda and fat free milk.

Snack: Handful of raw almonds and a tangerine

Lunch: Slice of lentil bolani with hummus (I know, it's getting repetitive). Spinach salad with chicken, roasted cauliflower, red peppers, red onions, and tomatoes.

Snack: Carrots with hummus. Baileys chocolate (I know, weak).

Dinner: Bok choy with Korean-style fish (my Mom got it at the Korean market) and shrimp with green onions.

Food Journal #12

Breakfast: One hard boiled egg. Banana with peanut butter. 1/2 cup of fat free milk.

Lunch: 1/4 Lentil Bolani with Roasted Garlic Hummus. Spinach salad with tomatoes, red peppers, and red onions. 6 Japanese Ramen wheat crackers.

Snack: Kashi Crunchy Chocolate Peanut Butter bar. Apple.

Dinner: Roasted chicken with carrots and onions and cauliflower.

Food Journal #11

Breakfast: Vanilla yogurt with granola

Snack: String cheese with mini V-8

Lunch: Spinach salad with red peppers, red onions, and boiled egg. 1/4 of a Lentil Bolani (I got it at the Farmer's Market) with Roasted Garlic Hummus. Nomsies.

Snack: Bailey's filled chocolate (why they are at work in our breakroom, I have no idea). Gala apple with peanut butter.

Dinner: Chinese choy; ground turkey with tofu, scrambled eggs with shrimp

Dessert: A little bit of mango

Dinner: Chicken Shish-ka-bob from Greek Isle. Not as good as the Gyro.

Defs did not eat enough that day. But it didn't matter because we popped two bottles of Dom Perignon at XS. Woot.

Snack: 1/4 pomelo (my new favorite citrus); Kashi Crunchy Chocolate Almond bar.

Lunch: Half a turkey and half a tuna burger with grilled onions and mushrooms, swiss cheese, lettuce, and tomato

30 Things to Do #4

My favorite book. Hmm, this might be harder than I thought. There have been very few books where I feel like it's really changed me. For me, it was hard to have required reading in school. I always felt rushed and I could never really enjoy the book afterward. I mean no one can really enjoy a book after they wrote a 10 page paper late into the morning. So it's hard for me to say I have a favorite.

But the first book that popped into my head was The China Garden.


I was about 13 or 14 when I read this book. I honestly don't remember the story now but I remember reading it and not putting it down. Now, it may be because I was reading it while in Italy that makes me remember loving the book. It might be literary garbage and similar to how teenage girls love Twilight books, but I couldn't put it down, to the irritation of my parents who were trying to get me to see Florence. I saw Florence for sure, but every free second I got, I was reading this book. I have pictures of me reading this book.

Now, I'm curious as to see if it is any good. So maybe I'll crack it out.

I had Pinkberry for the first time on a random day where they were giving out mini sizes of their new Mango flavor. I must say I was definitely impressed because I normally like to do-it-myself but the texture of their froyo was really nice. It didn't get melty like at other places and they were very efficient, especially with the lines of people getting it for free.

Too bad their store is the size of a porta-potty.

Ok when faced with a lot of choices, I often get overwhelmed. I tend to be indecisive and I just go through the many different scenarios in my head. It's an issue I'm still working on. Luckily the nice people at Pluto's helped me out. The salad maker told me the tri-tip was the best. So I followed his lead. I added 7 other items to my salad and it was delicious! The prices are cheap and the portions are huge. I ordered a side salad and it was bigger than the salads I make for my lunch. Tasty tasty.

Fleur de Sel. I was curious because there is the never-ending battle between Sprinkles and Kara's. There is a great divide in my office and they told me I had to pick sides. But after this, I pick neither.

The cupcake was not as sweet, which is a plus but it didn't blow me away like Sprinkles did the first time. Their frosting tasted better but it wasn't as fluffy as it looked. Maybe it's because I got there 2 minutes before they were closing and I ate it the next morning, after putting it in the fridge. Fine...I'll give it one more try. But I think this cupcake craze is dying off for me. Plus I'd rather make them at home.

Food Journal #7

Breakfast: Grande Skinny Carmel Macchiato, it's my signature drink at Starbucks. Homemade yogurt parfait with blueberries and granola

Snack: Half a Kashi Crunchy Chocolate Peanut granola bar. Half of a apple bran muffin from Starbucks (super dry, I can defs make a better one)

Lunch: Spinach salad with salmon, avocado, and sauteed red onions and zucchini. 4 saltine crackers.

Snack: The other half of my apple bran muffin. Banana with peanut butter.

Dinner: Barbecue pork spareribs, orange chicken, steamed asparagus, and white rice.

23 by 23

I love lists. I can conjure up a list for anything. So I'm turning 23 in 2 months. Time for a list.

These are 23 things I want to do by 23.

1. Go to Vegas - Going tomorrow!
2. Get a tattoo
3. Have a champagne brunch at my house - perhaps for my actual birthday? It is a Sunday.
4. Know what city I will be in the next 3 years
5. See my boo
6. Plant some flowers in the garden
7. Create my own cupcake recipe
8. Organize my recipes in a binder
9. Hang some more art
10. Create at least 2 pieces of art
11. Create that pajama collection
12. Cut my closet down to a more manageable size.

Food Journal #6

Breakfast: Cheese Croissant. I know, i know. So bad but it was only $.59 at Safeway! What a steal!

Snack: Apple with peanut butter

Lunch: Homemade lentil soup with saltine crackers, 1/2 a chocolate chunk cookie from Specialty's (so good and so worth the extra exercise)

Snack: 6 pieces of kimbap, 1/3 of a Kashi Crunchy bar

Dinner: Salmon, ground turkey and choy, brown rice

Dessert: Homemade blueberry and peach smoothie

30 Things to Do #3

Day 3: My favorite television program

Now as sad as it is, or maybe not so sad, I don't get to watch a lot of television anymore. I don't really have the time and I don't really let it run my life like I used to. Trust me, I made my own weekly television schedule in college.

So now when I get the chance, I usually watch it online since I probably already missed it when it aired.

How I Met Your Mother is the go to show when I'm folding my laundry or cleaning my room.



If I'm at the gym (where there is cable) I will watch anything on Food Network, even if it is a re-run. Giada is my favorite because she says anything Italian with rolled R, her kitchen is impeccable, and she always wears those low cut tops to showcase her amazing cleavage. Yes, us girls notice these things too. Plus she seems so nice and cute and the food she makes always looks so delicious and do-able too.

Snack: Kashi Crunchy bar, half a peanut butter and blueberry jelly sandwich on whole wheat bread, one string cheese. I went with my friends to climb Mission Peak. We made it to the top!

Late Lunch: 9 wings at Wingstop, french fries, an Arnold Palmer, carrot and celery stick (bad girl)

Dinner: 1/2 beansprouts, chicken with sauteed red onions and zucchini,

Snack: White corn tortilla chips with homemade guacamole and melted cheese (bad girl)

Weekends are bad for my diet. I tend to eat when and how I want and then feeling guilty about it. Maybe I need to be more conscious about what I ingest on the weekends.

Breakfast: 2 eggs scrambled with mozzarella cheese, half an English muffin with butter, 3 strawberries, green tea with milk

Snack: Banana nut muffin, 2 cups of coffee

Lunch: Marsala chicken with fettuccine, lasagna with ricotta cheese, spinach and mushrooms, green salad, half a fennel roll, strawberry shortcake. Santa Clara University does lunch right. Just saying.

Snack: Homemade guacamole and a handful of white tortilla chips

Dinner: Barbecue chicken, steamed asparagus, french bread with butter, Blue Moon beer

Dessert: Quickly milk tea. Not even worth the $.89 but it was chill since I went with Chirag.

Damn, I ate so much white bread today. I need to chill on that.

Food Journal #3

Breakfast: One string cheese, green tea.

Oh man, remember how I was craving donuts. One of the attorneys I work for brought in Krispy Kreme's. They aren't my favorite but hey, beggars can't be choosers right? So I got a mini chocolate. They make minis! Nom.
Apparently they have only 90 calories each and 5 grams of fat as opposed to the 200 calories and 12 grams of fat for the regular size. Mini for the win. Now can I resist getting another one? That is the ultimate test.

Snack: Fake apple pie, which is basically half an apple diced and microwaved, put some cinnamon on top and top with plain Greek yogurt. Add some honey and granola. Bomb. It's so filling it might as well be lunch. Meh.

Lunch: Shrimp with sauteed onions, ground turkey with some kind of Chinese choy, and brown rice

Snack: Kashi Crunchy Chocolate Almond bar. These are my new favorites. They have them at Costco right now for $6 off!

Dinner: 1 piece of Texas Toast (so bad, yet so good), spaghetti with cream of mushroom sauce, pineapple sausage and corn (kind of a crazy mix)

Dessert: 2 mini pieces of that brownie I made 2 nights ago, scoop of vanilla and a scoop of some chocolate Ben & Jerry's. I might have gone a little overboard. But hey it's been a freaking crazy week at work. I deserved it...maybe?
