
Sundays mean homemade mini veggie quiches.
This is a variation from the South Beach Diet that I'm currently doing with my coworker. Haha just for fun. It's super easy.
4 eggs
1 package of frozen spinach
1 can of mushrooms
1/4 diced onions
1/4 shredded cheese
Spray muffin tins with cooking spray.
Microwave spinach and drain liquid.
Whisk eggs.
Mix in other ingredients.
Divide evenly into muffin cups.
Bake at 350 degrees for 25 - 30 minutes.
Take out when knife comes out clean.


And more shoes! I just had to have them. They are from American Eagle, which I haven't been in a while but I saw these online. Kinda too cute to pass up. I wore them twice already. Tee hee.
