Super delicious chocolate chip cookies I made, using this recipe. Definitely the crispy kind of cookie that you dunk into milk. I prefer the chewy center. My search continues for the perfect chocolate chip cookie.

Easy Apple Crisp

Ingredients:
4 cups apple slices (about 4 small apples)
1 Bartlett pear sliced
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup water
1 cup granulated sugar
1 stick (4 ounces) butter
3/4 cup all-purpose flour

Preparation:
Place fruit in a buttered 10-inch deep-dish pie dish, alternating with sprinklings of the cinnamon and salt. Pour water over apple slices. In a mixing bowl, combine sugar, butter, and flour together with fingertips or pastry blender until crumbly. Sprinkle over the apples. Bake at 350° until apples are tender and top is browned, about 35 to 45 minutes. Serve with whipped cream or ice cream.

Apple crisp serves 6.

Muffin Madness

Applesauce Spice Cake Muffins from Joyful Abode. These were really good and easy to make. They would taste perfect during the Fall because of the spice in this cake.

Banana Muffin using Whipped's recipe.

I forgot that muffins cooked faster and I left these in for a little too long. Luckily this recipe makes the moistest bread so they weren't dry at all. Awesome save.

Waffle Sunday

I made waffles using Leslie's recipe. I used regular 1% milk instead of the buttermilk. I also added blueberries to one batch and chocolate chips to another.

It was so light and tasty.

Friday Treats

Here is the Pancake Muffins that I modified from Joy the Baker's recipe. I didn't use the glaze because I figured it might be too sweet for breakfast.

Scones in progress. I used Chris Chun's recipe for Lemonade Scones. The funny thing is that in Australia lemonade is actually like lemon lime soda, like 7 up. This was an easy recipe to play with.

Tandoori Chicken

I made dinner two Saturdays ago. I've never had Indian food but I decided to make Tandoori Chicken. Great success! I used this recipe from Delish. The sauce is soo good. Next time I would make smaller pieces of chicken or maybe but them on a skewer.

My mom made flan too! Noms. Yea, the cultures of the night kind of clashed. But it mixed pretty well in my belly.

Madeleines

I used a recipe that I modified from Epicurious.

Ingredients:
  • 2 large eggs
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup all purpose flour
  • 10 tablespoons (1 1/4 sticks) unsalted butter, melted, cooled slightly
Preheat oven to 375°F. Generously butter and flour pan for large madeleines (about 3x1 1/4 inches). Using electric mixer, beat eggs and 2/3 cup sugar in large bowl just to blend. Beat in vanilla, and salt. Add flour; beat just until blended. Gradually add cooled melted butter in steady stream, beating just until blended.

Chill for at least an hour. I chilled it overnight. I added a teaspoon of warm milk after I removed it from the fridge.

Spoon 1 tablespoon batter into each indentation in pan. Bake until puffed and brown, about 16 minutes. Cool 5 minutes. Gently remove from pan. Repeat process, buttering and flouring pan before each batch.

Popovers!

I made these popovers and whipped strawberry butter last weekend. They were light and airy and super tasty for breakfast.


I used the popover recipe over at Whipped. I definitely recommend using a popover pan. They are the key to this recipe.

To make the whipped strawberry butter, just whip 1/2 cup of butter with 1/2 cup of strawberry jam.
